Roasted butternut soup

Recipe found on reddit. Replaced the sweet potatoes with butternut squash.

Ingredients

  • 2 tbsp olive oil
  • 1 butternut squash
  • 1-2 red bell pepper
  • 3 cloves garlic, in skin
  • 1 red onion
  • 1.1L vegetable broth
  • 1 tsp paprika
  • 0.5 tsp sea salt
  • 0.25 tsp ground black pepper

Topping

  • Sliced green onions
  • Coconut milk
  • Paprika

Directions

  1. Preheat oven to 225°C and line a baking sheet with parchment paper.
  2. Arrange the butternut squash, bell peppers, onion and garlic in an even layer on the baking sheet and drizzle with olive oil.
  3. Sprinkle with salt and pepper.
  4. Place in the oven and roast for 30-35min.
  5. Remove garlic from skin and transfer to a large pot. Add the vegetable broth and paprika and puree until smooth.
  6. Bring to a simmer and cook for 10-15min to allow flavours to meld.
  7. To serve, top with coconut milk, sliced green onions and more paprika, if desired.
