Roasted butternut soup
Recipe found on reddit. Replaced the sweet potatoes with butternut squash.

Ingredients
- 2 tbsp olive oil
- 1 butternut squash
- 1-2 red bell pepper
- 3 cloves garlic, in skin
- 1 red onion
- 1.1L vegetable broth
- 1 tsp paprika
- 0.5 tsp sea salt
- 0.25 tsp ground black pepper
Topping
- Sliced green onions
- Coconut milk
- Paprika
Directions
- Preheat oven to 225°C and line a baking sheet with parchment paper.
- Arrange the butternut squash, bell peppers, onion and garlic in an even layer on the baking sheet and drizzle with olive oil.
- Sprinkle with salt and pepper.
- Place in the oven and roast for 30-35min.
- Remove garlic from skin and transfer to a large pot. Add the vegetable broth and paprika and puree until smooth.
- Bring to a simmer and cook for 10-15min to allow flavours to meld.
- To serve, top with coconut milk, sliced green onions and more paprika, if desired.
