Mackerel pasta

Simple pasta with canned mackerel, can be replaced with tuna or other fish in a can. Also works well without the parmesan.

Ingredients

  • 2 cans mackerel
  • 3-4 pressed garlic cloves
  • 2 tsp capers
  • 2 tbsp olive oil
  • Grated parmesean
  • Pasta
  • Lemon juice
  • Lemon zest
  • Chopped parsley
  • Salt and pepper

Directions

  1. Cook the pasta al dente.
  2. Add the remaining ingredients (except the parmesan and parsley) to a small pot. Stir and try to break the mackerel into smaller chunks.
  3. Place the smaller pot onto low heat, stir occasionally.
  4. Once the pasta is cooked save around 1 dl of the water, drain the rest.
  5. Add the contents of the small pot to the pasta, also throw in some parmesan and parsley, mix thoroughly.
  6. Serve with some additional parmesan on top and a lemon wedge.
