Indian curry with halloumi

A translation of this recipe. Halloumi serves as a stand-in for paneer. The curry base can be adapted and served with many other ingredients.

Ingredients

Paste

  • 2 dl sunflower seeds
  • 2 tbsp grated ginger
  • 4 garlic cloves
  • 2 tbsp sirup/honey
  • 2 tbsp canola oil
  • 3 tbsp garam masala
  • 3 tsp cummin
  • 3 tsp coriander
  • 1 pinch chili powder
  • 1 tsp salt

Curry

  • 1 can crushed tomatoes
  • 1 can coconut milk
  • 400g halloumi

Directions

  1. Blend all the ingredients (except tomatoes, coconut milk and halloumi) into a paste with a stick mixer.
  2. Put the paste in a pot and fry for 3 min in some oil.
  3. Add the tomatoes and then the coconut milk. Bring everything to a boil.
  4. Cut the halloumi in 2x2 cm squares and add to the curry.
  5. Serve with rice and naan.
