Indian curry with halloumi
A translation of this recipe. Halloumi serves as a stand-in for paneer. The curry base can be adapted and served with many other ingredients.

Ingredients
Paste
- 2 dl sunflower seeds
- 2 tbsp grated ginger
- 4 garlic cloves
- 2 tbsp sirup/honey
- 2 tbsp canola oil
- 3 tbsp garam masala
- 3 tsp cummin
- 3 tsp coriander
- 1 pinch chili powder
- 1 tsp salt
Curry
- 1 can crushed tomatoes
- 1 can coconut milk
- 400g halloumi
Directions
- Blend all the ingredients (except tomatoes, coconut milk and halloumi) into a paste with a stick mixer.
- Put the paste in a pot and fry for 3 min in some oil.
- Add the tomatoes and then the coconut milk. Bring everything to a boil.
- Cut the halloumi in 2x2 cm squares and add to the curry.
- Serve with rice and naan.
