Carnitas
This recipe takes some time to make but can feed many. Works great in burritos, tacos and quesedillas. Can easily be saved for later by storing after the slow cooker step.

Ingredients
- 1 kg pork loin
- 1 yellow onion
- 6 cloves garlic
- 1 can beer
- 3 tbsp chipotle sauce
- 2 cinnamon sticks
- 2 tbsp cumin
Directions
- Cut the pork loin into 10cm cubes.
- Dice onion and chop the garlic.
- Put all ingredients into a slow cooker.
- Mix it around a bit so that the chipotle sauce is spread into the beer.
- Put the slow cooker on low temperature and leave for 6-8 hrs.
- Once the cooking is done, set the oven to broil at 250°C.
- Add the contents from the slow cooker into a baking tray, make sure to add a generous amount of sauce.
- Put the tray into the oven and give the contents a stir every 10 mins or so.
- When the pork has become noticeably less saucy the carnitas are done!
